Throw together this Summer Southwest Salad for a filling guilt-free meal. It combines traditional southwest flavors with the citrus we associate with warm weather days.

Ingredients
Instructions
  1. Rinse lettuce, chop, and add to dish.
  2. Slice your Grilled Orange Chicken (or other chicken of choice). Add to lettuce.
  3. Top with black beans, corn, ½ orange, ½ avocado, jack cheese, and pico de gallo.
  4. Combine ingredients and toss in Cilantro Citrus Vinaigrette.
