Slow Cooker Creamy Sun-Dried Tomato Chicken
Your weeknight dinner problems are solved thanks to this easy creamy chicken entree. Just add everything to your slow cooker and let it work it's magic! Serve over rice to take full advantage of the delicious sauce.

Ingredients

chicken breasts

skinless and boneless

oz
low fat cream cheese
1
cup + ⅓ cup
chicken stock

tbsp
italian seasoning
1
tsp
garlic powder
1
tsp
onion powder
1½
tsp
salt
½
tsp
black pepper
⅓
cup
sun-dried tomatoes
handful
spinach leaves
Instructions
Place chicken breasts in bottom of slow cooker. Add all other ingredients on top.
Cook on high with lid on for 3 – 4 hours or low for 6 – 8 hours.
Remove chicken from slow cooker and use a fork to shred it. Place shredded chicken back in the slow cooker. Stir.
Add additional salt or pepper to taste. Serve over rice!
Notes
Nutrition information assumes you use low fat cream cheese. Any kind will work though!
