This easy yogurt marinated chicken is made in the air fryer but it can also be made on the grill or in the oven. The marinade includes greek yogurt, lemon juice, garlic, and the perfect blend of simple seasonings. It's so light and flavorful!
½cupgreek yogurt, Full fat, low fat, and nonfat will all work as long as it's unflavored and unsweetened. I like to use nonfat greek yogurt.
2tablespoonslemon juice
1tablespoongarlic, minced
2teaspoonsdried basil
¾teaspoonsalt
½teaspoononion powder
¼teaspoonblack pepper
¼teaspooncrushed red pepper flakes
Instructions
Cut chicken breasts horizontally. This will create 8 thin cutlets.
In a gallon Ziploc bag or large covered bowl combine chicken and all marinade ingredients. Let marinate for a minimum of 2 hours or as long as 12 hours. (I recommend marinating for 5 to 12 hours. The longer the better to really bring out the lemon flavor.)
Preheat air fryer to 375 degrees.
Place chicken cutlets in a single layer in the preheated air fryer so they're not overlapping. Air fry for 10 minutes. Flip chicken. Air fry for another 5 to 10 minutes or until internal temperature reaches 155 to 160 degrees. Be careful not to overcook. (Temperature AFTER resting should be 165 degrees.)Final cooking time will vary based on the thickness of your chicken and the model air fryer you're using.
