No Bake Chocolate Chip Cookie Balls (Energy Balls)
These No Bake Chocolate Chip Cookie Balls (also known as energy balls) are an easy breakfast, snack, or dessert. They're made with only good for you ingredients and ready in a quick 10 minutes!
¾cup + 1 tablespoonnut or seed butter, I use almond butter
⅓cuphoney or maple syrup
1teaspoonvanilla extract
½cupmini chocolate chips
Instructions
Pulse oats and nuts in a food processor or blender until they're in small pieces.
Combine all ingredients including the processed oats and nuts in a large mixing bowl. Stir.
Roll dough into 1-inch balls. Spread balls on a parchment paper lined plate or 9×13 baking sheet and refrigerate for a few minutes until firm. Then store in an airtight container in the refrigerator for up to 2 weeks or freezer for up to 3 months.
Notes
You can use regular sized chocolate chips or chunks but you may want to give them a quick chop so they blend better with everything else.Nutrition information is calculated assuming pecans, almond butter, and honey are used.If as you’re rolling the balls they’re breaking apart and not sticking together, just add a little more nut butter and/or honey.
