Ingredients
2medium zucchinisliced into half circles
12ouncesgreen beanscut into halves or thirds
1bell pepperany color, cored and cut into 1-inch strips
2tablespoonsolive oilextra virgin, can sub avocado oil spray
2teaspoonsdried basil
2teaspoonsdried oregano
1teaspoongarlic powder
¾teaspoonsalt
¼teaspoonblack pepper
12ouncesfully cooked sausages4 dinner sized links, sliced into 1/4 inch thick circles
Instructions
Preheat air fryer to 400 degrees.
In a large bowl, combine zucchini, green beans, and bell pepper. Generously spray with avocado oil spray or add 2 tablespoons extra virgin olive oil. Season with dried basil, dried oregano, garlic powder, salt, and pepper. Stir so vegetables are all fully coated with seasoning.
Add the seasoned vegetables to the preheated air fryer. Cook for 10 minutes. Add the sliced sausage. Stir. Cook for another 5 to 10 minutes, until vegetables are tender.
Notes
Nutrition information assumes you used 2 tablespoons of olive oil. If using an avocado oil spray you can further reduce your calories.
