Ingredients
2tablespoonsolive or avocado oil
2stalkscelerydiced
2carrotspeeled and diced
½medium white or yellow oniondiced
2teaspoonsgarlicminced
64 ounceschicken stock8 cups
2cupscooked chickenshredded or chopped, I use store-bought rotisserie chicken but you can use any fully cooked chicken
10 - 12 ouncesrefrigerated cheese tortellini
1teaspoonsalt
½teaspoondried oregano
½teaspoondried thyme
¼teaspoonblack pepper
¼cupfresh parsleyfinely chopped
Instructions
Add oil, celery, carrots, and onion to a soup pot. Sauté on medium high heat, stirring frequently, until onion is tender. Then add minced garlic and sauté until golden in color, about one minute.
Add chicken stock and bring to a quick boil.
Add shredded or chopped chicken, tortellini, salt, thyme, oregano, and pepper to stock. Simmer on medium high heat until tortellini is tender, about 5 minutes.
Stir in the fresh parsley. Taste and add more salt or pepper according to your preferences. Top with shaved parmesan or Homemade Croutons.
