This hearty hamburger soup is easy, healthy, and ready in just 30 minutes! It's a simple meal loaded with ground beef or turkey, potatoes, and vegetables in a delicious beef broth.
1poundlean ground beef or turkeyI use 93/7 ground beef
½white or yellow oniondiced
32ouncesbeef stock or broth
2medium potatoespeeled and diced
2medium carrotspeeled and diced
1cupfresh or frozen green beanssliced into thirds
14½ouncescan diced tomatoesfire-roasted is my favorite
2tablespoonstomato paste
1tablespoongarlicminced
1teaspoonthymedried
1teaspoonoreganodried
1teaspoonsalt
1teaspoononion powder
½teaspoonblack pepper
Instructions
Add your ground meat to a soup pot. Use your spatula to crumble the meat. (If using a very lean ground meat add a tablespoon of olive oil too.) Add in your onion. Cook on medium high, stirring occasionally, until hamburger is browned.
Add in all other ingredients. Stir. Cover and simmer for 20 – 25 minutes.
Taste. Add extra salt or pepper as desired.
Notes
Nutritional information is calculated based on a 1 cup serving. This is the amount I'd use when enjoying this along with something else. If the meal is the soup alone you'll likely want a 2 cup serving.
