Slice chicken into 1-inch to 1½-inch cubes. Add to a bag with the dried parsley, dried basil, dried rosemary, chili powder, paprika, onion powder, salt, and black pepper. Seal the bag closed and shake until the chicken pieces are all fully coated in the seasoning.
Add oil to a large skillet. You want your skillet to be large enough to accommodate all the seasoned chicken pieces without overcrowding. Heat to medium high heat. Once oil is hot, add chicken. Sauté until each side is browned and chicken is mostly cooked through, about 3 minutes per side. You want the outside of the chicken pieces to have some good color and this will take longer if you have too much chicken in your pan since that means some pieces won't be touching the bottom of the skillet.
Reduce heat to medium. Add minced garlic and lemon juice. Sauté until garlic is golden, about one minute.
