We’re sautéing tender pieces of chicken with lemon, garlic, dried herbs, and spices for an easy entree thats incredibly flavorful!

I could die on a lot of hills like having conversations on speaker while in public is rude, you should probably question literally everything you see on Facebook, and leaving your shopping cart in a parking space means you’re unwilling to spare an extra 5 seconds to save someone else’s car from getting dinged. But my hill of choice when it comes to food is you don’t need to complicate dinner for it to be amazing. In fact I’ve spent the last 10+ years yelling it from the mountain tops. All you need is a quick protein, something green, and a healthy carb source. Add in some big flavor and you’ll have an incredible meal with minimal effort.

To keep things fast (and create more surface area for seasoning) we’re slicing our chicken breasts into smaller pieces for this recipe. They’ll quickly sauté in olive oil, lemon juice, garlic, dried herbs, and spices. I recommend serving these yummy chicken bites over rice and with a side of broccoli or another roasted veggie. For the rice, try the steamed bags of rice that cook in 90 seconds. They make dinnertime a breeze for me on a regular basis!

Ingredients for Skillet Lemon Herb Chicken Bites

  • Chicken breasts: I recommend boneless skinless chicken breasts in this entree but chicken thighs (also boneless and skinless) would work well too. We’ll dice them into small pieces so they cook fast and have lots of surface area for our seasonings.
  • Olive oil: We’re sautéing the chicken in a little extra virgin olive oil to get them perfectly browned and tender.
  • Lemon juice: I love the bright flavor of lemon in this chicken recipe.
  • Garlic: You can mince your own fresh garlic or use jarred minced garlic to save time.
  • Seasonings: We’re using lots of dried herbs and spices to maximize the flavor of these chicken bites.

How to Make Skillet Lemon Herb Chicken Bites

Slice chicken into 1-inch to 1½-inch cubes. Add to a bag with the dried parsley, dried basil, dried rosemary, chili powder, paprika, onion powder, salt, and black pepper. Seal the bag closed and shake until the chicken pieces are all fully coated in the seasoning.

Add oil to a large skillet. You want your skillet to be large enough to accommodate all the seasoned chicken pieces without overcrowding. Heat to medium high heat. Once oil is hot, add chicken. Sauté until each side is browned and chicken is mostly cooked through, about 3 minutes per side. You want the outside of the chicken pieces to have some good color and this will take longer if you have too much chicken in your pan since that means some pieces won’t be touching the bottom of the skillet.

Reduce heat to medium. Add minced garlic and lemon juice. Sauté until garlic is golden, about one minute.
