Your weeknight dinner problems are solved thanks to this easy creamy chicken entree. Just add everything to your slow cooker and let it work it’s magic! Serve over rice to take full advantage of the delicious sauce.

This saucy chicken feels like warming comfort food to me. I started with my Slow Cooker Italian Shredded Chicken as my inspiration but wanted this dish to be decadent so I included cream cheese. Oh it was worth it, friends. The sauce feels rich and it’s absolutely divine.

I love this entree over white rice but brown rice, roasted potatoes, or mashed potatoes would also work well. If you want to keep this low carb you can ladle it over cauliflower rice or roasted veggies (I adore everything on roasted broccoli).

For this recipe you’ll need (full list of ingredients and instructions are in the recipe card below):

  • Chicken breasts
  • Cream cheese
  • Sun-dried tomatoes
  • Spinach
  • Chicken stock or broth
  • Seasonings

Can you use chicken thighs?

Absolutely. Feel free to use boneless skinless thighs if you prefer.

What cream cheese is best to use?

You’re welcome to use any cream cheese brand you like. I opt for a low fat cream cheese and it works beautifully.

What is italian seasoning?

Italian seasoning is a mix of herbs like basil, oregano, thyme, and rosemary. The herb blend can vary depending on the brand.

This is different from the envelopes of italian seasoning you might also see (usually located by taco seasoning). Those tend to have lots of salt in them too.

You can find italian seasoning on the spice aisle of your grocery store. It comes in a small glass or plastic jar just like other spices.

Can you omit the spinach?

Absolutely. Skip the spinach if you like! It makes zero difference in terms of flavor.

What is the best way to shred the chicken?

I know the popular answer right now is to use a hand mixer. I’m personally not a fan. It feels like more work for me to set up the mixer and wash the paddles. Of course you can always use the mixer if you like! I prefer to use two large forks to shred chicken. It may feel a bit old fashioned, but its so effective and quick!

How to serve this?

I serve this shredded chicken over rice and I think it’s just perfect. If you’re eating low carb, try this on cauliflower rice or roasted veggies.

Slow Cooker Creamy Sun-Dried Tomato Chicken

Ingredients 

  • 2 lbs chicken breasts, skinless and boneless
  • 8 oz low fat cream cheese
  • 1 cup + â…“ cup chicken stock
  • 2 tbsp italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1½ tsp salt
  • ½ tsp black pepper
  • â…“ cup sun-dried tomatoes
  • handful spinach leaves

Instructions 

  • Place chicken breasts in bottom of slow cooker. Add all other ingredients on top.
  • Cook on high with lid on for 3 – 4 hours or low for 6 – 8 hours.
  • Remove chicken from slow cooker and use a fork to shred it. Place shredded chicken back in the slow cooker. Stir.
  • Add additional salt or pepper to taste. Serve over rice!

Notes
