Your weeknight dinner problems are solved thanks to this easy creamy chicken entree. Just add everything to your slow cooker and let it work it’s magic! Serve over rice to take full advantage of the delicious sauce.

This saucy chicken feels like warming comfort food to me. I started with my Slow Cooker Italian Shredded Chicken as my inspiration but wanted this dish to be decadent so I included cream cheese. Oh it was worth it, friends. The sauce feels rich and it’s absolutely divine.
The best part is truly how easy it is. Everything goes right in the slow cooker! Shred your chicken after cooking and add it back to the sauce. You’re done!
I love this entree over white rice but brown rice, roasted potatoes, or mashed potatoes would also work well. If you want to keep this low carb you can ladle it over cauliflower rice or roasted veggies (I adore everything on roasted broccoli).

Ingredients for Slow Cooker Creamy Sun-Dried Tomato Chicken
- Chicken breasts: We’re using boneless skinless chicken breasts because it’s a lean protein. You can use boneless skinless chicken thighs if you prefer dark meat.
- Cream cheese: You’re welcome to use any cream cheese brand you like. I opt for a low fat cream cheese and it works beautifully.
- Jarred sun-dried tomatoes: I recommend using the julienne cut sun-dried tomatoes. They come in a jar and they’re mixed with oil.
- Spinach: Fresh spinach leaves amp up the nutrition in our entree. Skip the spinach if you like! It makes zero difference in terms of flavor.
- Chicken stock or broth: Both chicken stock and chicken broth can be used here. Take your pick! Stock is typically made by simmering chicken bones for hours along with carrots, celery, and onion. Broth is made by simmering the whole chicken instead of only the bones. You can sub vegetable broth if that’s what you have on hand.
- Seasonings: Italian seasoning, garlic powder, onion powder, salt, and black powder are the only seasonings you’ll need to flavor this sauce.

How to Make Slow Cooker Creamy Sun-Dried Tomato Chicken
Place chicken breasts in bottom of slow cooker. Add all other ingredients on top.
Cook on high with lid on for 3 – 4 hours or low for 6 – 8 hours.
Remove chicken from slow cooker and use a fork to shred it. Place shredded chicken back in the slow cooker. Stir.

What is Italian Seasoning?
Italian seasoning is a mix of herbs like basil, oregano, thyme, and rosemary. The herb blend can vary depending on the brand.
This is different from the envelopes of italian seasoning you might also see (usually located by taco seasoning). Those tend to have lots of salt in them too.
You can find italian seasoning on the spice aisle of your grocery store. It comes in a small glass or plastic jar just like other spices.
What is the Best Way to Shred Chicken?
I know the popular answer right now is to use a hand mixer. I’m personally not a fan. It feels like more work for me to set up the mixer and wash the paddles. Of course you can always use the mixer if you like! I prefer to use two large forks to shred chicken. It may feel a bit old fashioned, but its so effective and quick!

How to Serve
I serve this shredded chicken over rice and I think it’s just perfect. If you’re eating low carb, try this on cauliflower rice or roasted veggies.

Slow Cooker Creamy Sun-Dried Tomato Chicken
Ingredients
- 2 pounds chicken breasts, skinless and boneless
- 8 ounces low fat cream cheese
- 1 cup + ⅓ cup chicken stock
- 2 tablespoons italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1½ teaspoon salt
- ½ teaspoon black pepper
- ⅓ cup sun-dried tomatoes
- handful spinach leaves
Instructions
- Place chicken breasts in bottom of slow cooker. Add all other ingredients on top.

- Add additional salt or pepper to taste. Serve over rice!
