This easy chicken casserole is comforting, cheesy, and includes a fluffy crust made from crescent roll dough.

My childhood was filled with classic comfort food dinners. They feel so nostalgic to me in the best possible way. One bite and I’m transported back to a time when life’s biggest challenges were that week’s softball game and counting down the days until I could get my braces removed. While I love a traditional childhood meal I also really enjoy creating new variations that still give me that warm hug feeling.

This delicious casserole is everything you want in your favorite comfort foods. It feels cozy, it’s made with simple ingredients, and it’s easy to throw together. But my favorite part is the flakey crust. To achieve that we’re using crescent roll dough. Stir together the filling mixture and layer on top of the dough. Top with cheese and bake!

Ingredients for Creamy Chicken and Broccoli Crescent Roll Casserole

  • Crescent roll dough: We’re using one tube of crescent roll dough to create the base of our casserole. I buy Original Pillsbury Crescent Rolls. After unrolling the dough we pinch the perforated lines to close them up and create a sheet of dough.
  • Sour cream: A combination of sour cream and cream cheese adds the creamiest texture to this casserole. Sour cream helps lighten the consistency so its perfectly fluffy.
  • Cream cheese: I like to use the 1/3 less fat Philadelphia cream cheese but you can use whatever kind you prefer.
  • Shredded or chopped chicken: To save time I like to purchase a cooked rotisserie chicken from the grocery store and just give it a quick chop. You can use cooked chicken breasts or any leftover chicken.
  • Chopped broccoli: Do not use frozen broccoli here. You want to chop fresh broccoli into small even-sized pieces.
  • Shredded cheddar cheese: You can use any shredded cheese you like but I prefer shredded sharp cheddar for the boldest flavor.
  • Seasonings: Italian seasoning, garlic powder, onion powder, salt, and black pepper are the only seasonings you need to flavor this simple casserole.

How to Make Creamy Chicken and Broccoli Crescent Roll Casserole

Open and unroll one tube of crescent roll dough in the bottom of the greased baking dish. (Any cooking spray will do!) You should see triangles that are connected by dotted lines. Pinch the dough together where the dotted lines are (to close them) so that you have one long rectangle of crescent roll dough. Place in the oven at 375 degrees and bake until dough is golden brown, 10 to 13 minutes. It takes a full 13 minutes in my oven to achieve the golden color I want.

Meanwhile, in a large bowl stir together sour cream, cream cheese, italian seasoning, garlic powder, onion powder, salt, and black pepper. Once combined stir in the chicken and broccoli.

Once the crescent roll dough is golden brown, remove it from the oven. Let it sit for a minimum of 15 minutes so that it cools. (If you skip this step the breading will flatten quite a bit when you add the chicken so your finished casserole won’t be as thick as we want it.)

Spread the chicken mixture in an even layer on top of the cooled dough. Sprinkle the shredded cheddar on top.

Increase the oven temperature to 400 degrees. Place back in the oven and bake for 15 to 20 minutes, until cheese is melted with some browning. If you need some additional browning after you can broil for 1 to 3 minutes.

Remove from the oven and let it cool for a few minutes. Slice into 8 large servings.

How to Serve This

I recommend pairing this cheesy chicken casserole with a green veggie like Sautéed Garlic Green Beans or Parmesan Kale Salad. Any simple salad will do!

Creamy Chicken and Broccoli Crescent Roll Casserole

Ingredients 

  • 1 tube crescent roll dough, I use Original Pillsbury Crescent Rolls
  • 16 ounces sour cream, I use Daisy Light Sour Cream
  • 8 ounces cream cheese, I use 1/3 less fat philadelphia
  • 3 teaspoons italian seasoning
  • teaspoons salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • 2 cups shredded or chopped fully cooked chicken, I chop a store-bought rotisserie chicken but any shredded cooked chicken will work
  • 2 cups finely chopped broccoli, do not use frozen, Make sure the broccoli is thoroughly chopped so that it will cook quickly and evenly
  • 8 ounces shredded cheddar cheese
