In December when I talked on instagram about making my Sausage and Cheddar Breakfast Casserole every year for Christmas morning I received so many messages asking if you can omit the bread or if there was a low carb version. So I set out to create a low carb breakfast casserole with all the classic flavors of the original.

This Low Carb Sausage Cheddar Breakfast Casserole doesn’t have bread or potatoes in it. Yet its every bit as satisfying and delicious as you’d hope. The ingredient list is simple and you know I’ve included plenty of dried herbs and seasonings to maximize flavor. I just know you’ll love it.

  • Ground turkey, beef, chicken, or pork
  • Eggs
  • Milk
  • Cheddar cheese

How to Make Low Carb Sausage Cheddar Breakfast Casserole

To make this recipe you’ll first brown and season your ground meat. While that’s cooking, whisk together the eggs, milk, and a few seasonings. Spread the finished ground meat in the bottom of a baking dish. Top with the cheese and egg mixture. Bake! It’s so simple and so good!

What size baking dish should you use?

You’ll want to use a 9 x 13 baking dish for this recipe.

Can you prep this ahead of time?

Yes! Cook the ground meat, assemble the casserole, refrigerate it covered overnight, and pop it in the oven (with no cover) in the morning. It comes out perfectly!

Can you use a different cheese?

I love cheddar in this breakfast casserole but shredded mozzarella would also be a great choice.

How to serve this

Low Carb Sausage Cheddar Breakfast Casserole

Ingredients 

Ground Meat

  • 1 pound lean ground turkey, beef, chicken, or pork
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • ¾ teaspoon salt
  • ¾ teaspoon black pepper
  • ½ teaspoon chili powder

Egg Mixture

  • 12 eggs
  • 2 cups milk
  • 1 teasoon dried oregano
  • 1 teaspoon dried parsley
  • ¾ teaspoon ground mustard
  • ¾ teaspoon salt
  • ¾ teaspoon black pepper
  • ½ teaspoon chili powder

Cheese

  • 1 cup shredded cheddar cheese

Instructions 

  • Preheat oven to 350 degrees.
  • Add your ground meat to a large skillet on the stovetop. Use a spatula to crumble the meat. Cook on medium-high heat, stirring occasionally, until browned. Stir in rosemary, thyme, salt, pepper, and chili powder.
  • In a large bowl whisk together eggs, milk, oregano, parsley, ground mustard, salt, pepper, and chili powder. Set aside.
  • Spread cooked ground meat in the bottom of a 9 x 13 baking dish. Then spread the cheese on top. Pour egg mixture over everything.
  • Bake for 50 minutes to 1 hour. Center should not be wiggly. Remove from the oven and let sit for 5 minutes before cutting. Slice into 8 pieces.
