Sheet Pan Sausage with Potatoes & Green Beans
Dinner is served in only 30 minutes with this easy sheet pan meal! Sausage, potatoes, and green beans roast together in this quick meal the whole family will love.

One of my all time favorite sheet pan meals is my Sheet Pan Sausage & Veggies. I can’t even tell you how often I’ve whipped that one up! A whole heck of a lot! It’s just so fast that it keeps my family fed when we have very little time (or the head chef of this household – that’s me – has very little will to cook). Today’s recipe is a very natural extension of that recipe and you’re going to be pleased as punch to gobble it up.
You’re welcome to use whatever fully cooked sausage you prefer. I typically go with this chicken and apple one from Applegate that I find at Whole Foods. I also recommend their fire roasted red pepper and sweet Italian varieties. Another great brand to check out is Aidells if you’re wanting another solid option with clean ingredients. But really any fully cooked sausage will work so if you have a brand you love go with it!
The prep is minimal. The most time intensive thing you’ll have to do is chop your potatoes and slice the sausage. Talk about simple, right?
For this recipe you’ll need (full list of ingredients and instructions are in the recipe card below):
- Green beans
- Olive oil
Spread the sausage, potatoes, and green beans on a parchment paper lined baking sheet.
Drizzle with olive oil and all the seasonings. Use a spatula to spread everything around so that it’s evenly coated. Spread in a single layer on the baking sheet. Bake until potatoes are perfectly tender and enjoy!
What sausage works best?
Use your favorite fully cooked sausage. Chicken, beef, turkey, or pork would all work. I prefer Applegate chicken sausages because the ingredient list is short but the flavor is always great. I get mine at Whole Foods. (Not an ad. Just sharing my preference if you’re looking for a brand to try.) Two other brands you might enjoy are Bilinski’s and Aidells.
What potatoes are best?
You can use any potato variety you like. I use gold or yellow potatoes because they always taste a little buttery and my family loves that.
Can you use a different veggie?
Green beans can easily be swapped out for another veggie that cooks in the same amount of time. Brussels sprouts, broccoli, and carrot sticks would all work beautifully too!
What size sheet pan should you use?
I use a 12 x 17 baking sheet for all my sheet pan recipes. This accommodates a lot of food without overcrowding. If your baking sheet is smaller, use two instead of one. (Don’t overcrowd.)
Does this sheet pan meal freeze well?
Yes! If making this meal for future enjoyment you can freeze it in an airtight freezer safe container (like freezer bags). Then thaw and reheat in a skillet on the stovetop or in the microwave.

Sheet Pan Sausage with Potatoes & Green Beans
- 4 fully cooked sausages, sliced into circles 1/4 inch thick
- 12 oz fresh green beans, trimmed
- 1 lb potatoes, cut into 1-inch chunks, I prefer yellow or gold potatoes.
- 3 tbsp olive oil, extra virgin
- 3/4 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- Preheat the oven to 425°F. Line a 12" x 17" baking sheet with parchment paper.
- Spread green beans, potatoes, and sausage on the baking sheet. They do not need to be kept separate. Drizzle with olive oil. Sprinkle with salt, pepper, garlic powder, basil, and oregano. Stir so everything is well seasoned. Spread sausage and veggies in a single layer after stirring.
- Place in the oven and bake for 20 to 25 minutes or until potatoes are tender and cooked through.

A quick and easy go to dinner that the whole family loves!! It’s always a battle to see who gets to take the leftovers for lunch the next day–there aren’t usually many. We like it with spicy andouille sausage and love to sub asparagus for the green beans when it’s in season.

I used ALDI Never Any! Apple Chicken Sausage and The Little Potato Company Dynamic Duo (red and yellow small creamer potatoes-I halved the larger ones). I also substituted 5 diced garlic cloves for garlic powder, and added one half red onion (sliced and quartered) and a few sprigs of fresh rosemary (this added a great pop of flavor!). I followed the instructions except I stirred together all the ingredients in a large bowl, then poured onto a baking sheet and baked for 30 minutes.
One of my go-to recipes when I’m not sure what to make! I recently added chopped carrots to this mix and we loved it. Thank you for adding veggie suggestions that cook in a similar amount of time, it’s always so helpful!

This was great! I had no green beans OR potatoes, so hacked up 4 beef kielbasas, one yellow bell pepper, a handful of baby carrots, a Vidalia onion, and one medium yellow squash. Used recipe seasonings and directions, except tossed all in one bowl to oil and season up, and then dumped on parchment on baking sheet. Also used convection to get things cooked enough and a bit of crisp on sausage slices. I would think there is no way to mess up a good basic recipe like this, so glad we tried it. 🙂
What an easy, delicious meal! This has to be one of the easiest recipes I’ve come across and yummier than I imagined! My husband kept sneaking bites before dinner time and over and over he said it was a do-again meal. It’s also a cheap meal! Score!

I see you have a shrimp recipe but how could you make this recipe by replacing the sausage with shrimp? What would the instructions be for that?
Hi Matthew, shrimp cooks a lot faster than sausage so if you wanted to use sausage here you’d only need it on the sheet pan for the last 5 to 7 minutes of the cook time.

This is a go to for us! We use chicken sausage for us… unless the grandsons are here. They also devour it! Great recipe and it freezes well.

Why can’t one just pour everything into a large bowl and add olive oil and spices , and stir them all around, coatingeverything and then pour everything onto sheet?
It works for me and, and this way if using parchment paper, you won’t rip it……

One of our go to favorites. I make this, but put everything into a large ziplock bag to mix and coat it. Then dump onto my baking sheet and sprinkle parmesan cheese or cheddar cheese all over the top of it. Then bake as directed.

I’m going to make this, but was wondering if I could use canned Whole New Potatoes instead of fresh?
Hi! I wouldn’t recommend roasting anything that’s been canned because of the amount of liquid that would have been absorbed into the potatoes (or any canned food).

This is my favorite side dishes (personally I could just eat this alone as a one dish meal but my husband prefers a 4 course meal, so this is cooked as a side dish for us). There are several different recipes for this dish using other spices or quantities of ingredients, but this recipe is by far the BEST!! I always double ingredients and cook in a 9″x13″ glass casserole dish sprayed with olive oil for easy clean up!! (*Tip: You can also substitute fresh green beans with can green beans but they won’t turn out crisp of course, the beans will be soft/mushy as if boiled)

I’ve been wanting to make this recipe for a quite some time and finally decided it was time. Oh My Goodness! It was so easy and tasted amazing. My husband and I both loved it. The recipe will now be on a regular rotation. The only deviation I made from the recipe was I halved the amount of oregano and basil, my palette is a little more sensitive, knowing I could add more next time if I felt like it needed it. Great dinner!!
