These roasted green beans with toasted almonds will be your new favorite side dish. This is an easy recipe with the simple flavors of lemon and garlic. It’s a perfect side dish for weeknight dinners or on your holiday table.
Update: This recipe was originally published in 2018 and has been republished with all new photos.
My go to green bean recipe for years has been my (Garlic Green Beans). Those are extra garlicky sauteed green beans made in a large skillet. So good! But the simple recipe I’m sharing today is another delicious way to take green beans to the next level.
This is my spin on green beans almondine, a classic french side dish and a great way to elevate regular green beans. The name might sound fancy but the cooking process is easy. In this recipe we’re roasting our green beans to really bring out the flavor.
Roasting is hands down the best way to make veggies. It’s easy, the cook time is short, and every vegetable just comes out tasting better. Roasting green beans in particular makes them tender with a little char. Those browned bits are absolutely delicious! Almonds also get a glow up when they’re roasted. Raw almonds can be a little bland but toasting them until golden brown is a whole other story. Suddenly the flavor is stronger! And crunchy almonds pair beautifully with the softness of the green beans.
Because this recipe is fast you can enjoy it any night of the week. Simply toss your ingredients on a baking sheet and pop it in the oven. Voila! It’s ease also makes it a great option for your thanksgiving table (this is so much better than a green bean casserole) or a special occasion like a dinner party. Just ladle the finished green beans on a serving platter. You can even top with an almond garnish or lemon zest for an extra impressive presentation.

Roasted Green Beans with Almonds Ingredients
- Green beans: Fresh green beans roast beautifully in this delicious side dish recipe.
- Olive oil: You’ll want to use extra-virgin olive oil or avocado oil to help get our green beans perfectly tender in the oven.
- Slivered almonds: I recommend slivered almonds because they’re a little thicker and less likely to burn than sliced almonds.
- Minced garlic: You can mince your own garlic or use a jarred variety.
- Lemon juice: The bright flavor of lemon makes these green beans a little different.
- Salt and pepper: Salt and black pepper are the only seasonings you need to flavor this recipe.
How to Make Roasted Green Beans with Asparagus
Spread green beans in a single layer on baking sheet. Drizzle with olive oil. Roll the green beans in the olive oil so each one is nicely coated. Liberally salt and pepper. Bake at 425 degrees for 15 minutes.
Remove from the oven. Flip green beans. Spread minced garlic and slivered almonds. Drizzle with lemon juice. Place back in the oven and bake for an additional 5 to 7 minutes. That’s it! A short cooking time, simple ingredients, and big flavor! Serve with an extra squeeze of lemon and you’ll quickly see why this is one of my favorite recipes.
How to Store
Store these green beans in an airtight container in the refrigerator for up to 4 days.
You can also freeze them if you prefer. Freeze in an airtight freezer safe container (like freezer bags). Then thaw and reheat in a skillet on the stovetop or in the microwave.
How to Serve
Pair these yummy green beans with a main dish like Lemon Herb Marinated Grilled Chicken or Easy Pan Seared Chipotle Lime Salmon. Add a side salad for the easiest way to create a beautiful meal!
