Sausage with some combination of fresh veggies is one of my favorite dinner solutions when I’m feeling like I want to put in the minimum effort. I feel like sometimes we put so much pressure on ourselves to prepare a more complicated meal. It’s just not necessary, friends. Simple can be totally delicious! Simple meals like these are a life saver for me on busy weeknights and always a family favorite.

This recipe can be enjoyed on its own or you can add a side dish if you like. To keep this meal low carb, serve with cauliflower rice, Roasted Spaghetti Squash, or a side salad. Want more carbs? Try serving with white or brown rice! This easy dinner recipe also pairs well with my Easy Seasoned Oven Roasted Potatoes. Whichever side you choose, you’re guaranteed a delicious dinner (and a healthy dinner!) with this entree on your plate.

This flavor combination can be accomplished using a variety of cooking methods but I remain partial to sheet pan meals myself. There’s just something so satisfying about tossing all the ingredients on a single sheet pan and popping it in the oven. Sheet Pan Sausage Dinner Ingredients

  • Sausage or kielbasa: You can use pork, chicken, beef, or turkey sausage. I most often use chicken sausage or beef sausage. Sweet Italian sausage or hot Italian sausages are also delicious options that add so much flavor.
  • Zucchini: Zucchini softens quickly as it cooks, making it a great choice for quick stir fries and skillet meals.
  • Broccoli: We’re roasting fresh broccoli florets in this sheet pan meal. They cook quickly so they’re the perfect side for fast cooking sausage.
  • Bell peppers or mini sweet peppers: I prefer a mix of red bell pepper and green bell pepper but any color will work. Mini sweet peppers are a fun option too.
  • Olive oil: The oil helps make the onion and bell pepper tender. It also gives us some browning on the sausage and really bring out its flavor. I recommend extra virgin olive oil or avocado oil but you can use any oil you’re comfortable cooking with.
  • Simple seasonings: Italian seasoning, garlic powder, onion powder, salt, and black pepper are all you need to add more flavor to this easy recipe.

How to Make this Sheet Pan Sausage Dinner

Spread the sausage, zucchini, broccoli, and peppers in an even layer on a parchment paper lined baking sheet.

Drizzle with a little bit of olive oil and all the seasonings. Use a spatula to spread everything around so that it’s evenly coated. Spread in a single layer on the baking sheet. Bake until zucchini is perfectly tender and enjoy!

What sausage works best?

Use your favorite fully cooked sausage. Chicken, beef, turkey, or pork would all work. I prefer Applegate chicken sausages because the ingredient list is short but the flavor is always great. I get mine at Whole Foods or Sprouts. (Not an ad. Just sharing my preference if you’re looking for a brand to try.) Two other brands you might enjoy are Bilinski’s and Aidells. Can you use a different vegetable?

Absolutely! You’re welcome to use another vegetable that cooks in the same amount of time. Some of my favorite veggies that would work with this roasting temp and time include brussels sprouts, green beans, carrots (cut into sticks or circles), baby carrots, or red onion (cut into chunks). Sweet potatoes would be especially good paired with the sausage. Red potatoes, baby potatoes, russet potatoes, or yellow/gold potatoes are other options. If you do add potatoes to this sheet pan meal be sure to dice them into small bite-sized pieces to ensure they cook quickly.

What size sheet pan should you use?

I use a 12 x 17 baking sheet for all my sheet pan recipes. This accommodates a lot of food without overcrowding. If your baking sheet is smaller, use two instead of one. (Don’t overcrowd.)

Does this sheet pan meal freeze well?

Yes! If making this healthy sheet pan sausage meal for future enjoyment you can freeze it in an airtight freezer safe container (like freezer bags). Then thaw and reheat in a skillet on the stovetop or in the microwave.

How to Store Leftovers

Want to enjoy this sausage and veggies recipe the next day or later in the week? This meal is great for meal prep! Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in a large skillet on the stovetop on low to medium-low heat until warmed through.

Sheet Pan Sausage with Zucchini and Broccoli

Ingredients 

  • 12 ounces fully cooked sausages, 4 dinner sized links, sliced into 1/4 inch thick circles
  • 2 zucchini, cut into 1/2 circles
  • 12 ounces fresh broccoli florets
  • 2 bell peppers or 10 mini sweet peppers, any color, sliced into strips
  • 3 tablespoons olive oil, extra virgin
  • 1 tablespoon italian seasoning
  • ¾ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Preheat oven to 400 degrees. Line a 12" x 17" baking sheet with parchment paper.
  • Spread the sausage, zucchini, broccoli, and peppers on the baking sheet. Drizzle with oil. Sprinkle with italian seasoning, garlic powder, onion powder, salt, and pepper over everything. Stir so everything is well seasoned. Spread sausage and veggies in a single layer after stirring.
  • Place in the oven and bake for 30 to 35 minutes or until zucchini is tender.
