Soup season is here and it makes my soup loving heart so happy! Soup is a comforting meal in cold weather and on busy weeknights. I can’t imagine anything cozier than a warm bowl of soup in the colder months, can you?

I’ve gathered my favorite easy recipes for all kinds of delicious soups. If you’re looking for a chicken soup I have so many! Want a vegetable soup? I have several of those too. Need a chili recipe? I have five. Craving a hamburger soup, creamy tomato soup, chicken noodle soup, tortellini soup, or taco soup? You can find them here! I have options for the slow cooker, Instant Pot, and stovetop. You’ll find soups made with chicken, beef, sausage, vegetables, pasta, rice, potatoes, and more. There’s so much variety and every soup is easy to customize to your own preferences too.

Stock vs Broth

Soup recipes often call for chicken stock or beef stock. But what if you have chicken broth or beef broth instead? Use that broth!

Stock is typically made from bones while broth is made from a combination of meat and vegetables. Broth tends to be a bit more flavorful but we add so much flavor when we create a soup that both options can work beautifully. You can also opt for vegetable broth if you prefer.

My #1 Soup Tip

Double that recipe and freeze it!

I love to make a double batch of soup. It’s requires very little extra effort – usually just more chopping. Then we can eat one batch and freeze the other. This way our freezer is stocked full of quick meals all fall and winter!

How to Best Freeze Soup

Store the finished soup in an airtight container. (I personally like freezer bags because I can lay them flat and stack one on top of the other to maximize my space.) Let your soup completely cool in the refrigerator and then move it to the freezer. Soups can last up to 2 months in the freezer.

How to Customize a Soup

Soup is the easiest recipe type to customize based on what you have on hand at home. Here are a few of my favorite ways to do that.

  • Mix up your protein based on what you’re craving or have at home. Swap chicken thighs for chicken breasts (or vice versa). Substitute ground turkey or ground chicken for ground beef. If a soup recipe calls for chicken sausage but you have pork or beef sausage use that instead.
  • Save time by using fully cooked rotisserie chicken from your grocery store. Simply shred it and add it to the soup at the end of cooking time.
  • Potatoes are typically interchangeable in soup so you can take your pick between yellow/gold potatoes, russet potatoes, or red-skinned potatoes even if a soup recipe calls for one you don’t have. Sweet potatoes can be used too for a different flavor.
  • Many veggies are also interchangeable in soup. Feel free to use broccoli, green beans, zucchini, squash, or carrots if that’s what you have in your fridge.
  • Add greens! Fresh spinach leaves can always be stirred into soup at the end of the cooking time to amp up your veggie intake. Those leaves wilt quickly so no need to cook them into the soup. Just stir them into the hot broth when you’re done.
  • Add beans! Canned beans require minimal time to heat through so add them to any soup that doesn’t include them as a great way to get in some extra fiber. White beans, black beans, and pinto beans are delicious additions. 
  • Serve up your finished soup with fun toppings! Shredded cheddar cheese, shaved parmesan cheese, sour cream, or fresh herbs would work well depending on the soup. Serve with tortilla chips, crackers, or crusty bread.
